Ingredients
1 tablespoon Pink Pitaya Powder
1 cup oats
1 cup plant milk (almond or oat)
1 teaspoon baking powder
1 teaspoon apple cider vinegar
1 tablespoon flax meal
1 banana
Topping:
1 tablespoon Pink Pitaya powder
4 tablespoons almond butter (or any kind)
1 tablespoon melted coconut oil
1/2 cup orange juice
Handful fresh raspberries
Maple syrup
Steps
Add the Pink Pitaya Powder, oats and baking powder to your blender and blend until combined.
Then add the banana, milk, apple cider vinegar and flax meal - continue to blend until a mixture has formed.
Spoon the mixture into a non-stick frying pan (on medium heat) with some coconut oil and fry for 2-3 mins each side.
Build your stack and add your toppings!
For topping, mix Pitaya Powder with orange juice, almond butter and melted coconut oil. Add more of less orange juice depending on how thin you want it. Top pancakes with topping and add fruit and maple syrup as desired.
