These 5-ingredient, baked, mini pancakes are made with bananas, peanut butter, steel cut oats and cacao powder. I don’t like to stand in front of the pan waiting for pancakes to cook so I just bake them which is so much easier and requires less fat too! It’s so effortless and so delicious… To be enjoyed as Sunday brunch or as a healthy afternoon snack.

Ingredients
3 fresh bananas
3 tablespoons peanut butter
0.5 cup cacao powder
0.5 cup steel cut oats
1 tablespoon maple syrup
Optional toppings: cacao nibs
Steps
Slice out half a banana and set to the side.
Blend all ingredients until smooth.
Using an ice cream scoop, place 1 scoop of dough onto baking sheet. Repeat process, making sure each mini pancake is at least 1” apart from each other.
Bake for 20min at 450F
Serve with fresh banana slices, cacao nibs and maple syrup.
