Ingredients 

  • 1.5 pounds chicken thighs or breasts

  • 1 tablespoon ground turmeric

  • 4 tablespoons coconut oil

  • Pink Himalayan salt

  • 1 zucchini, sliced

  • 1.5 cups roughly chopped broccoli

  • 1 inch fresh ginger, grated

  • 1 can full fat coconut milk (14 ounces)

  • 1 tablespoon fish sauce

  • 8 ounces rice noodles

  • 2 lime, juice and zest

  • 1/4 cup fresh mint

Steps 

  1. Toss the chicken with the turmeric and 1 tablespoon oil. Season with salt.

  2. Heat 2 tablespoons oil in a large Dutch oven or a large pot over medium-high heat. Add the chicken and sear on both sides until browned, about 2 minutes. Remove the chicken from the pot and set it aside.

  3. To the pot, add the zucchini, ginger, broccoli and a pinch of salt. Cook 5 minutes, until they just begin to soften. Add the coconut milk, 1/2 cup water, the chicken and the fish sauce. Stir to combine.

  4. Partially cover and simmer for 10-15 minutes, or until the chicken is cooked through. Remove from the heat. Season to taste with salt and lime juice.

  5. Meanwhile, cook the rice noodles according to package directions. 

  6. To serve, divide the noodles among bowls and spoon the saucy chicken over top. Top with lime zest, mint, and limes.
