This Turkey Meatball Lunch is yummy yet light and easy to digest. Made with fresh parsley which stimulates digestion, burns toxins and minimize gas and bloating, you’ll feel energized from the protein boost of the turkey meatballs & bone broth without feeling weighted down from eating meat. Ingredients 

  • 2 lbs ground turkey

  • 1 large onion, finely chopped

  • 5 sprigs parsley, washed & chopped finely

  • 6-8 handfuls fresh spinach

  • 1.5 cups bone broth

  • 1 teaspoon ghee

  • Pinch pink Himalayan salt & fresh ground pepper

Steps 

  1. In a mixing bowl, mix the turkey, parsley and onion together. Add salt & pepper to your liking.

  2. Using a teaspoon to scoop some mixture into your hands and shape the mixture into 1-inch balls.

  3. Heat the ghee in a frying pan, arrange the meatballs in the pan and cook them until cooked ~15min. Cook with a lid on to keep them moist.

  4. Meanwhile, heat the bone broth in a large sauce pan and add the spinach. Cook until the spinach is tender ~5min.

  5. Add meatballs into bone broth and spinach mix and serve over rice or quinoa.
