Zucchini & avocado noodles

This Yoom spiralized zucchini pasta are tossed in a creamy avocado pesto: a quick, tasty and low carb alternative to traditional pasta! It’s extremely easy to digest, making it a favorite for promoting regular bowel movement and weight loss as well as reducing acid reflux and fatigue after meals.

Ingredients 

  • 2 zucchinis

  • 2 tbsp lemon juice

  • 2 tbsp ghee

  • 1 avocado

  • 4 tbsp pine nuts

  • 1 1/4 cup basil

  • Mineral salt & pepper 

 

Steps 

  1. Wash the zucchini in water and make the noodles using a peeler or a spiralizer (we used this OXO one).

  2. Cook the spiralized zucchini noodles in a pan with ghee. Cover the pan while it cooks to retain moisture, should take about 3 to 5 minutes. Toss half-way.

  3. Blend the rest of the ingredients in a blender until smooth, adding a pinch of salt and pepper.

  4. In a large bowl, toss noodles in the creamy avocado sauce and enjoy!
