Coconut Beet Soup

Yummy, creamy, dairy-free, this dark pink beet soup is my favorite Summer go-to. Serve it as a light healthy dinner or as a side or appetizer. It’s deliciously smooth with an earthy flavor and so quick and easy to make. Anti-inflammatory and high in antioxidants, beets are a liver-loving and blood-cleansing tonic.⁣⁣⁣ Bon appetit!

Ingredients 

Soup

  • 4 roasted beets

  • 1 can coconut milk

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon pink Himalayan salt

Garnish

  • 1 tablespoon sesame seeds

  • 2 sprigs fresh coriander

 

Steps 

  1. Blend all soup ingredients in immersion blender until smooth.

  2. Serve soup topping each bowl with garnish.

  3. Enjoy warm or room temperature!
