Coconut Beet Soup
Yummy, creamy, dairy-free, this dark pink beet soup is my favorite Summer go-to. Serve it as a light healthy dinner or as a side or appetizer. It’s deliciously smooth with an earthy flavor and so quick and easy to make. Anti-inflammatory and high in antioxidants, beets are a liver-loving and blood-cleansing tonic. Bon appetit!

Ingredients
Soup
4 roasted beets
1 can coconut milk
1/4 teaspoon black pepper
1/4 teaspoon pink Himalayan salt
Garnish
1 tablespoon sesame seeds
2 sprigs fresh coriander
Steps
Blend all soup ingredients in immersion blender until smooth.
Serve soup topping each bowl with garnish.
Enjoy warm or room temperature!
