Vegan creamy coconut lentil curry

This Yoom Vegan Coconut Lentil Curry is wonderfully nourishing yet light and aromatic. It takes a bit of time to simmer but requires very little active cooking time. The perfect choice for a Sunday lunch or weeknight dinner. Lentils prevent digestive disorders because they are high in fiber and of all legumes and nuts, lentils contain the third-highest levels of protein.Although lentils include all these beneficial nutrients like fiber, protein, minerals and vitamins, they are still low in calories and contain virtually no fat with little calories. Note: The outer shell of lentils (and some beans) contains anti-nutrients that can interfere with digestion. The solution is to soak them, thereby neutralizing the anti-nutrients. Pour your lentils in a large pot and cover them with cold water for 2 to 4 hours. Then drain the water and give the lentils another quick rinse with fresh, cold water and you’re all set to cook.

Ingredients 

  • 2 Tbsps coconut oil

  • 1 Tbsp cumin seeds

  • 1 Tbsp coriander seeds

  • 3 cups crushed tomatoes (1 can)

  • 1 Tbsp powdered ginger

  • 1 Tbsp turmeric

  • 2 teaspoons sea salt

  • 1 cup dried brown lentils

  • 1 can coconut milk

 

Steps 

  1. Heat the coconut oil in a large pot over medium-high heat. Add the cumin and coriander seeds and toast until they start to brown, about 45 seconds.

  2. Add the can of crushed tomatoes, ginger, turmeric, and sea salt to the pot and cook, stirring the pot a few times, for 5 minutes. Add the lentils and 3 cups of water to the pot and bring it to a boil. Reduce the heat to low, cover the pot, and let it simmer for 35-40 minutes, or until the lentils are soft. Stir the pot a few times to prevent the lentils from sticking to the bottom. If the curry starts to look dry, add an extra 1/2- 1 cup of water.

  3. Once the lentils are soft, add the coconut milk and bring the pot back to a simmer. Remove the pot from the heat and enjoy.
