Adding butternut squash puree to the mix makes for a hearty Autumn dish. Squashes are unusual in that they are not only hearty, yet also drain excess fluids because of a mild diuretic nature. This dual quality makes them ideal for those trying to lose weight but still struggle with comfort food cravings in autumn.

Ingredients

  • 4 Kitchari pouches buy here

  • 2 lime wedges

  • Handful of chives

  • 1 butternut squash, precut

 

Steps 

  1. In an 8” saucepan, pour kitchari pouches in 6.5 cups of boiling water.

  2. On medium-to-high flame, boil for 20min stirring occasionally.

  3. Meanwhile, steam butternut squash until tender. Transfer it to a food processor and puree until smooth.

  4. Once the Kitchari mix is cooked, stir in the pureed squash and salt. Taste and season with more salt as needed.

  5. Serve warm, topped with black pepper and minced chives.
