Zucchini & lemon zest Kitchari

Unwind with a bowl of Zucchini Kitchari. It’s soothing and comforting without weighing you down! Being extremely easy to digest, zucchini is a favorite for anyone who’s tired & stressed, experiencing constipation, acid reflux or fatigue after meals. It’s also very low in calories making it the perfect light option for dinner time. Top it all with fresh lemon zest for an aromatic and digestive kick. Bon appetit!

Ingredients

  • Yoom Kitchari buy here

  • 1 teaspoons ghee (or 2 tsp olive/coconut oil) buy here

  • 1 chopped zucchini

  • 1 lemon

 

Steps 

  1. In a medium 8” sauce pan, pour Yoom Kitchari in 3.5 cups of boiling water.

  2. On medium-to-high flame, boil for 20min stirring occasionally.

  3. Meanwhile, wash and chop the zucchini to your liking (I like thin slices but you can do 1'“ cubes).

  4. Half-way through cooking (10min in), add the zucchini to the sauce pan.

  5. Kitchari is ready when it looks like oatmeal.

  6. Serve Kitchari in a bowl and top it off with lemon zest, ghee, fresh herbs and generous amounts of lemon juice and black pepper.
